Ingredients:
1 lb. fresh tomatoes, diced
1/3 cup chopped fresh basil
1/4 cup chopped fresh parsley
3 large cloves garlic, crushed
3 tbsp. olive oil
1 tbsp. balsamic vinegar
1/2 tsp. sea salt
1/2 tsp. pepper
Directions:
Place tomatoes, herbs and garlic into large pot. Gently stir in oil, vinegar, salt and pepper. Simmer for 45-60 minutes. Serve over your favorite pasta.
