Sauerkraut Surprise

Makes 2 to 3 dozen
Ingredients
1 cup sauerkraut, drained and chopped
1 package (3 oz.) corned beef, finely cup up
1 cup bread crumbs
1 egg, slightly beaten
1 small onion, finely chopped
¼ cup water
2 tbsp. parsley
1 tbsp. horseradish
1 clove garlic, crushed
½ tsp. sea salt
2 eggs, beaten
½ cup bread crumbs
Prepared mustard
Directions
Mix sauerkraut, corned beef, 1 cup bred crumbs, 1 slightly beaten egg, onion, water, parsley, horseradish, garlic, salt; refrigerate at least 1 hour. Heat oven to 400F. Shape mixture into 1” balls. Dip in 2 beaten eggs, then roll in ½ cup breadcrumbs. Bake on un-greased baking sheet until light brown, about 20 minutes. Serve hot with mustard.
