Red Papaya Salsa

Serves 4-6. Great served with seafood.
Ingredients
Peel and seed papaya, then finely dice capsicums, red onion and papaya. Place in a bowl with finely chopped dill and add olive oil. Sprinkle salt and gentle stir; allow to sit for 30 minutes before serving.

- ½ green capsicum
- ½ red capsicum
- ½ medium red onion
- 2 tablespoons fresh dill
- 100mls of olive oil
- 1/4teaspoon of sea salt
